Last minute bbq but so happy to be firing up Old Jessica and smoking some ribs
29/07/2023
I recently returned home to the old U.S. of A. To visit my parents. While I was there I was asked to put my dads under-utilised weber kettle to work.
So over the course of 2 weeks I did my best to show off, not only my bbq skills but show my dad the versatility of a classic kettle bbq. We had a blast and I got to show my old man a few tricks 😉
Big thanks to for supplying some rubs to take over to use. I got to show family and friends the amazing flavour profiles these rubs create to amplify my bbq… everyone loved them and I had a blast sharing my passion.

Who doesn’t love some pulled pork. 😎
I small boneless pork shoulder, smoked low n’ slow on a 26’ Weber kettle. Had heaps of fun cooking on my dads Weber, using Oregon White Oak and my favourite dynamic duo.

Epic finish in these ribs. The combination of the Oregon White Oak, made for an epic bark and rich colour. They were super tasty and didn’t last long 😎

Finally putting the blends to work here in Central Washington USA.
Cooking up some nice St Louis Pork ribs and as always rocking the Weekend and Gentlemen blends. They are pairing nicely with the Oregon White Oak… sweet sweet flavours coming off the grill today.

All done… 4 coats of oil down and it’s slick but not oily. It’s my first serious go at this so not perfect but I’m happy with the end result. Now to start cooking with it. What should I cook first?

Old cast iron pan that’s been in the cupboard rusting away. Finally got it out, used a power drill with a wite brush attachment and now it’s ready to be seasoned.
Last time I did it, I kind of half a**’d it. Going for at least 5 coats of oil this time around. Can’t wait to see how it turns out.

Levelling up our Sunday morning pancakes. My little dude helped me whip up some pancakes and we decided Sugar and Spice blend was the way to go.
In all honesty we under seasoned this time around. Which is a good thing, cause I know I can go harder without making it an overly sweet pancake but still benefit from all the other flavours in the blend.

The bark on this rack is next level. The texture and flavours is something I’ve never achieved before. rub blends are seriously next level
