🥜 Peanut Butter Jam Double 🍓
I was craving something a lil different than the standard flavour profiles on my signature burger and opted for some Crunchy Peanut Butter & some of the finest Strawberry Jam goin' round town at the moment.
The wonderful team at put the many strawberries destined for the EKKA Strawberry Sundaes and turned them into delicious Strawberry Jam! 🍓
The Peanut Butter wasn't anything fancy, just your run of the mill crunchy spread. 🥜
But together they formed a formidable combination and paired perfectly with my house made pickles & freshly ground chuck smash Patties.
Albeit not the most aesthetic,perfectly crunchy edges and all round supermodel burger. It was Ugly Delicious, and I think I'm quite happy with that 🤤

Hello 🙋
It's been a minute between posts for me , just a quick one to say don't forget about cha boy!
Plans for a pop-up haven't gone as to plan for me this year, it's easy to use Covid as an excuse which certainly plays a roll but alot of it boils down to a culmination of things, you see I'm a people pleaser and it scares the absolute s**t out of me that maybe these burgers just won't cut it, plus time management & general unknowns for someone new to the hospitality industry 🤷
I don't doubt my chance to sling burgers to my loyal follower base will come, it's just a matter of patience⏰
I've started the steps in talking with council, so once the dust settles with restrictions I'll pop into their office and get some clarity over what they expect from me & go from there.
Until then enjoy these In'n'Out inspired Burgs I cooked up for the NBA Finals a few weeks back.

Livin' on Leftovers 🍔
Brisket leftover trim makes for perfect smashburgers, no need to add anything.
Perfect blend of meat to fat ratio and the Maillard reaction when it hits the smoking hot griddle is unreal.🤤
With such a high fat content it basically cooks in its own juices and creates a super crunchy edge but retains a super juicy middle. The best of both worlds. 👌
I paired with with a super spicy version of my burger sauce and boy did it pack a punch 💥

Risk it for the brisket 🤔
Now it mightn be a burger but this was just too damn good not too share 🤤
I picked up a Black Onyx Brisket rubbed with Butchers Axe 'Big Bark' and used the leftovers from the low'n'slow cook for a seriously simple yet delicious toastie!!
Aside from burgers I have a serious soft spot for a good quality toasted sanga so it's really no surprise I'd eventually post one of my creations 🧑🍳
Fear not though as the trimmings from the brisket will be ground up and used for smashburgers very shortly so watch this space 👀👀

Stoked I had some spare time to whip up a few double smashies the other night, even better when I can pair them with one of Bacchus Brewing Co latest creations "Juice Junkies- Sabro"
Unbelievably smooth and packed full of flavour. Is there a better combo then double okhlahoma beef smashies and beer?
If there is I'm not interested, this'll do me just fine 👌

Triple Okhla' Chilli Jam SmashBurg 🍔
Damnnn it felt so good to get behind the griddle last night after a month off 🤯
I recently had a chat with the legend about the use of Wagyu in Smashed burgers and pondered the best way to go about it.
Couldn't go past a slab of Wagyu brisket at the butchers the other day and thought I'd give it a whirl.
I was hesitant to smash it beyond belief and risk evaporating all that juicy fat, so it was a simple light smash, season & dress with cheese.
Due to the high fat content it was effortless in the smash process, almost like a k**b of butter on a hotplate. Opted for some very thinly sliced onion in the smash, a perfect pairing if you ask me.🤌
Finished off some chilli jam for some sweet'n'heat this was certainly a pleaser.
Unfortunately my fresh batch of pickles weren't ready for consumption so the trusty supermarket pickles had to do.🤷
