The kimchi you’re tasting is only fermented for about one week, so it has a fresher, milder tangy flavour. 🥬
Personally, I prefer kimchi that’s been fermented for at least two weeks — deeper, richer, and more developed in flavour.
But everyone’s taste is different, and that’s part of the beauty of kimchi. ✨

We’ve been working on creating a gentler kimchi that isn’t too overpowering with garlic, while still full of flavour without using fish sauce.
Kimchi pairs beautifully with almost any Asian dish based on soy sauce or fermented seasonings — bibimbap, fried rice, curry, noodles, ramen and more.
As the weather gets cooler, our bodies naturally slow down too.

Our focus is on creating flavours that feel balanced, clean, and easy to enjoy every day — not overly heavy or overpowering.
Our sauce philosophy is simple: no MSG, plant-based, and made to feel light and nourishing for everyone.

This year, we’re continuing our journey with a mild plant-based kimchi.
After three winters of experimenting, tasting, and refining,
it’s finally starting to taste like the kind of kimchi we truly want to share.
Less overpowering garlic,
no fish sauce,
just a cleaner, gentler, plant-based flavour that feels good to eat.
Our goal this year is to finally launch it properly

One thing we’ve learned from running a bibimbap shop for the past 5 years—
bibimbap can be a little tricky.
If you’re new to it, you might not mix it.
Some don’t add the sauce,
and some even use the bibimbap sauce on other dishes, like kimchi fried rice and japchae.
In Korea, mixing everything together is natural.
But here, we realised it can feel unfamiliar.

🌟 What's New at Bibimbap&Grill (Hello Bibimbap)? 🌟
If you're a fan of our Tofu Bibimbap and Japchae, you might’ve noticed something a little different with our fried tofu lately. 🍚✨
We've made a small but tasty change! Previously, we used Earthy Grown firm tofu, but we weren’t fully satisfied with the frying results. As a firm tofu, it became even firmer and a bit chewy after frying. So, we've now switched to Korean tofu for frying 😋. Since Korean tofu is softer, it results in a crispier outside and a softer inside, not to mention a nuttier, more flavourful taste.

I've read an article today highlighting that by 2030, Australians will consume more junk food and less fresh produce, leading to an increase in health risks like obesity and heart disease.
With fresh food prices rising and junk food remaining cheap, eating healthy is becoming more challenging.
After reading this article, we feel that as lunch suppliers, we should place more focus on providing our customers with high-quality meals made from fresh vegetables and healthy ingredients, all in an accessible and affordable way.
