Who has made it to All Things Sweet Bakery this weekend? We went for a late lunch. You can tell they have been absolutely smashed this weekend, but they still had food coming out of the kitchen.
No pics of the pies/sausage rolls/bacon and cheese sausage roll that were consumed. But a few pics of the sweets we purchased (minus the blueberry pie that our resident coeliac ate before I could get a photo 🤣).
Pre-Christmas this would be an almost weekly stop for us. I can't wait for their online ordering to return so we can go back to soft white bread for school lunches!

While we were really hoping for a Mother’s Day weekend opening, the final stages (and the usual extra complications) did end up blowing over into this week, which unfortunately meant that wasn’t in the cards.
When we started making our production plan in the hopes of opening in time, it became very clear that we wouldn’t have been able to open at full capacity with less than one week’s prep anyway, which isn’t what we wanted for our grand reopening.
So with that in mind, an official announcement will come once everything is 100% confirmed (juuuuust in case), but…..

You have to love a bottom shelf find. Yes we have the ingredients to make this from scratch, but with the resident chef at work, it was a night for something easy.
It is quite strong, so we didn't use the full amount and then diluted it with water and some cornflour to thicken the sauce back up.
Household debate.... Should veges be added to the sauce or kept separate? As long as it's eaten, I don't care 🤣🥦

PART 2 - The Pantry
Buffet style is always daunting. For embarkation day lunch, it is also all that is available. For this reason, we got the earliest boarding time we could, and the pantry was pretty much empty when we arrived (roast of the day wasn't even cut up yet, so Miss got the first serving of that).
GF items were clearly marked, however there were a few items that I suspect were GF that weren't labelled as such (but wasn't the meals she wanted, so we didn't worry about querying this).
Roast, mashed potato, steamed veges, hot chips, grilled fish and salads were all options for lunch on day 1.
The dessert buffet also had 2 GF options (you needed to know to ask for these as there was no signage). The GF options were chocolate mousse and tiramisu.
Because it is self serve, there is also the risk of others contaminating food (later in the trip I did see a woman put some roast chicken on her plate, then put it back on the buffet). That being said, at busy times, the turnover of food is quite a lot, and based on how good the staff were, I think if you were to ask for fresh items from the kitchen due to dietary requirements, I suspect they would be more than happy to accommodate.

PART 1
Our review - Carnival Encounter (3 night cruise)
Recently we went on a cruise for a family celebration. Not our first cruise, but the first since Carnival purchased the Encounter. Now, apologies that the photos in the next few posts aren't that great, but the lighting wasn't made for photos, and someone just wanted her food :)
We are happy to report that food was super easy for us, but we know on our first cruise were were a bit daunted by how it would all work (I must say, the P&O served buffet was definitely something we preferred, but we worked with what was available).
Before you sail - there was conflicting information about whether we had to email or complete an online form to notify of dietary requirements, so we did both. The email address we found was [email protected]. With this, we included our booking number, name, ship we were going to be on and sailing dates.
Day 1: When you get on board you can head to Dragon Lady pretty much straight away to pre-order dinner for that night. Once onboard and connected to the wifi you will be able to see which restaurant you are booked into.
We were booked into Angelo's. The staff let us take a copy of the menu with us to drop back with our order rather than having to fill out straight away.
Dinner for night 1 was meatballs for entree, a cream and herb pasta for main and the Carnival melting chocolate cake (the only dessert that will feature from this cruise lol) for dessert.

Driving home from Toowoomba we decided to take the scenic route to grab some takeaway for dinner (we left it to late to book a table and the restaurant was packed when we arrived to collect our order).
Thank you for cooking our dinner Chinese Cuisine Noodle Asia because we really didn't want to cook last night 😂

This one is a hack, not one of our recipes. But it was delicious and easy, so thought we needed to share 🎂
When you want a cinnamon roll cake, but didn't feel like making the cake from scratch.... You get creative and hack a recipe you already know is good 🤣
We used the cinnamon topping recipe and cream cheese frosting from The Loopy Whisk (will share their full cake recipe in the links), but used Glen's cream cheese icing
You will need:
1 vanilla or butter cake mix (make as per box)
Cinnamon butter (make as required in the linked recipe, you will need light brown sugar, cinnamon GF flour and unsalted butter). Mix together and then swirl into cake batter (see picture below)
Bake per cake instructions
Once cake is cooked, leave to cool for 20 minutes. While cooking, make the cream cheese icing (make as set out in the linked recipe, you will need cream cheese, icing sugar (we used the one that came with the cake mix) vanilla and milk).
Ice with cream cheese frosting and enjoy!
Tip: We would use a smaller pan if we made with a cake mix next time.

We have been using a lot of yoghurt in our baking lately, so Nikki has made up some Greek yoghurt for the first time in years. This one still has a few hours to go as it doesn't have powdered milk in it to thicken it up, just milk, some cream (which is optional) and the remnants of our last container of yoghurt 🥄🥣
After ages spent getting the milk to the right temperature last night, I read on Facebook this morning that if you use UHT you don't have to do the initial heating process... So now we're going to have to try that for another batch 🤣🤣🤣

A memory on Facebook today - when our little coeliac was younger we used to send in treats or activities for coeliac awareness week. One year the teacher was lovely and let us run a taste test experiment with the kids.
It was a huge hit and the only item the kids could clearly tell was GF was the fairy bread (I think if we'd used bread from All Things Sweet we would have fooled more 🤣🤣).

We have been going through a LOT of Woolworths GF choc cross buns lately, so this morning we decided to try out a new recipe thanks to mygfguide.com. We didn't follow the recipe exactly, but we tried to stick to it as closely as possible (changes below), but they were light and fluffy and other than a house debate over why Nikki bothered putting the crosses in them (🤣🤦umm because they are hot CROSS buns thank you very much 🤣) they have been absolutely devoured (2 kept to try reheating tomorrow to see how they go).
So our changes/tips
1. We didn't use orange, party because we didn't have any in the house, partly because 1 child is a chocolate purist. This included just doing a water and icing glaze as well.
2. When shaping them, we didn't use the water/tap tip. Instead, hands and the spatula were sprayed with oil. This would have got through the whole batch without needing to touch them up, but I was stuffing around getting the batter out, so touched up for the last bit for bun #4. (A trick from when we make focaccia and it works really well).
3. I used the Thermomix on dough function to mix the batter together. Next time I would add the chocolate chips right at the end, as they were obliterated into the batter and I did want the chunks of chocolate (just means we have to make them again).
4. It's not the best proving recipe in Brisbane today, so we put the oven on a low heat and then sat the tray on this for extra warmth (also could use the Thermomix to assist in proving if you have one).
5. Follow the recommendation of adding ice to your oven. It turns your oven into a steam oven and the results are definitely different (we use this for a few items we cook).

We’ve had many messages asking what Glen’s up to next since Mouli wrapped up ❤️ The love has honestly meant the world.
While Mouli has closed, Glen isn’t hanging up the apron. He’s taking his skills, flavours and obsession with good food to a new kitchen, working alongside some great people on someone else’s team.
We’ll be sure to share where you can find him once he’s settled in.
Thank you again for all the support, memories and messages — they’ve meant more than you know. While Glen's time at Chermside has come to an end, he (and this page) aren't going anywhere and there’s plenty more to come. 🍴✨

This one was a hack, not one of Glen's recipes. But a sleepover breakfast calls for pancakes, and when you dn't want to make them individually.... you make a panCAKE instead. This one was made using a Greens GF pancake shake mix.
Apparently it needs to be served with way too much Nutella and strawberries, but toppings can vary 🤣

Calling this one an “almost” pizza pocket 😄
Stuffed with a mix of leftover roast chicken that has been diced, mozzarella, pizza sauce and a drizzle of BBQ sauce stuffed into a Warburtons Gluten Free pita pocket — a quick 30 seconds in the microwave, then finished in the pan for that golden crunch.
Absolutely devoured by the non-coeliac child, with the question of could it have bacon next time (because bacon is her life). We'll save the debate of pineapple and non-pineapple for next time 🧐

We saw a comment recently on a coeliac page about people missing tinned spaghetti. Recently we came across this recipe and, before you add the mince, the texture when using GF pasta is very similar. Now we just need All Things Sweet to be open after their refurb so we can get some decent size bread to try it as a jaffle :)

After seeing this on Kati Keksi - your gluten free guide a while back, we've finally been able to find some in our local woolies. Our non-coeliac is a huge Mac n Cheese fan so we wanted to try this one for our coeliac. We didn't keep it vegan, instead using regular milk and butter (and some extra cheese, of course 🤣).
Sadly, she wasn't a fan, but we were. After trying it plain and with extra cheese, having a chef in the house definitely came in handy, and I highly recommend Glen's next variation to it.... adding oregano, garlic powder and paprika. The best description I can give is pizza inspired Mac n Cheese and it was delicious.

Glen tried a new recipe at home this week. While we had a few steamed dumplings, the fried ones were definitely the favourites for the smallest members of the house, they were even coeliac and non coeliac approved!
