If you have never tried a CM process before, here is exactly how it changes the cup:

How it works: Similar to anaerobic fermentation, whole cherries are sealed in tanks and flushed with CO2 to completely remove oxygen.

Why it matters: This controlled, gentle fermentation spikes the sugars, resulting in a much richer, syrupy sweetness than a standard natural process.
