We are about to drop the Black Honey Mosto Lactic Geisha into the roaster. If you want to know what the highest tier of Colombian processing looks like, this is it.
The farm strips the skin and lets the pulp overripen until it turns pitch black. From there, it is fermented in a sealed tank using its own naturally excreted juices and a lactic yeast culture, constantly recirculating the liquid to build depth and body. This results in massive notes of florals and sweet lollies.
It is a wildly complex, high risk processing method that pays off perfectly in the cup.

✈️ The Layover: Ikahu Farm, Kenya
Four day deep dive into a single estate, featuring the same variety with a different process every day.
🇰🇪Ikahu Farm in Muranga County. While Kenya is world-renowned for washed coffees, seeing Honey, Natural, and Anaerobic processes from a single Kenyan estate is almost unheard of.
The Schedule:
Thursday 9th Sept: Washed
Friday 10th Sept: Honey
Saturday 11th: Natural
Monday 13th: Anaerobic Natural
The Heritage:
Bought in 1974, this 8-acre farm sits at 1750 MASL on fertile, red volcanic soil. For decades, Kenyan law forced farmers like the Ikahu family to sell through cooperatives, meaning their unique coffee was blended away into generic "washed" lots.
The Shift:
In 2021, the laws changed. The family returned to the land, regenerated their original SL28 and Ruiru 11 trees, and began experimenting with Honey, Natural, and Anaerobic processes. This is their first time reaching the Australian market.

This high scoring regional lot is exactly why we love washed coffees. By stripping the fruit pulp before drying, the processing highlights a super clean, floral profile that shines in the cup.

We pulled in 7 different coffees that will immediately take over the top end of our menu. We are the only roastery in the country to secure 4 of these exact lots, and the remaining three are down to a very limited number of boxes.
