A look back at our Q&A with Edwin Norena of Campo Hermoso 🍒
It’s one of our absolute bestsellers, but dialing in this flavour profile is no easy feat. It goes through three massive processing methods. Get fermentation wrong, and you end up with a batch tasting like sweaty gym socks. Get it right, and you get pure magic in the cup.
Here is the blueprint behind the madness:
⏱️ Stage 1: It kicks off with a 96-hour whole cherry fermentation.
💧 The Extraction: We pull the cherries and collect the resulting liquid (known as the mosto).
🔄 The Recirculation: The mosto is moved to the second stage and recirculated every 24 hours for a full 120 hours to lock in that wild, sweet profile.

All dialled in on our new Strada. We spent the morning pulling shots of our blends, and the clarity is unreal. Drop by and taste it for yourself! ☕️

This new shed officially doubles our total footprint and triples our warehouse space. It’s exactly the upgrade we needed to take Passport to the next level.
Here is what is moving into the new space:
🧊 The Cold Room: A massive new cold room in the corner. Our current fridges just can’t keep up with the summer cold brew demand, so we are seriously scaling up.
📦 Storage & Logistics: New pallet racking and all our packaging materials are moving out back. This frees up the front for green bean prep (while the bulk of our green beans stay safe in the climate-controlled roaster space).
🛠️ The Tech Workshop: A brand new, air-conditioned tech room fully equipped with 20, 32, and 40-amp power. Our technician will be doing commercial and domestic machine repairs, plus refurbishing secondhand equipment.
🤝 Space to Share: We also have an air-conditioned office and a vacant mezzanine that we’ll be subleasing out! (Shoot us a DM if you’re looking for a spot).

After 6 incredible years in our current setup, our cafe has really done it all. We’ve loved serving up your daily coffee, retail beans, and equipment, and we’ve hosted some unforgettable events in this space. ☕️
But right now, the roaster, green bean storage, and packing dispatch are tightly squeezed at the back. We finally ran out of runway.
So... we knocked a big old hole straight through the wall. We’ve officially signed the lease on the shed next door!

We’ve come a long way from the back shed... and we’re not done yet
Eight years ago, Passport started in a hot tin shed. A roaster, some storage, and not much else. Three months in we bought a coffee machine. Six months later, we moved 40 metres down the driveway into our first retail space.
Over the next couple of weeks you’ll see changes happening at the roastery.
