Been wanting to try this wavy technique for a while but haven’t had a cake with a meringue style buttercream to try it! This style is a French meringue buttercream and contains whole eggs rather than just egg whites. Tastes like a combination of custard and buttercream which is just divine

As I have decided to start studying my business has unfortunately closed for the foreseeable future 😞😞 BUT before it did I did one last massive order for of of my regular client’s wedding. Two cakes for this, and 200 desserts to go with it as well !! Easily my largest order ever and a great finish to my time doing this. I’ll still be caking in my spare time if I get a chance and you can catch me at teaching some of their amazing classes. Thanks everyone for the support !!!

Just before I went to Sydney I had some time off. I decided to manically fill all that time with making this monster. At work we have a Christmas themed cake/cookie competition that is about to start, so I thought I’d get in early and compete ! Unfortunately as the cake will be displayed the entire thing is foam :(. But this is by far the biggest cake I’ve ever made !!! Really proud of it, maybe one day I’ll enter the ACADA competition who knows
