Local burrata. Still undefeated.

We tried taking it off… didn’t last.

Vine-ripened tomatoes, grated down into a punchy salsa and seasoned right to the edge.
Pepe di cayenne, pickled onion, basil — simple but it hits.

Then you cut into it…

Add San Daniele or white anchovies if you know what you’re doing.

This is the one you come back for.

Say Ciao to Iris Siciliana , Sicily’s best kept sweet secret

That golden crust gives way to a cloud like centre, filled with silky sheep’s milk riccotta and Valhrona dark chocolate that just melt

It’s the kind of bite that makes you close your eyes for a second.
Yup it’s that good.

We can’t ignore what’s happening globally it’s reshaping supply chains everywhere. So over a month ago, we set ourselves a challenge: go 100% Australian flour for our doughs.

After a lot of trial, error, and rethinking old-world techniques through a new-world lens, we’ve landed on something we’re genuinely proud of.

She’s light, crispy, earthy & with that beautiful leopard spotting we love.

It’s been a journey (and a lot of flour blends later), but myself and are confident this is our best dough yet.

Rolling out this Wednesday / Thursday.

Simple things, done with care.

Crescia sfogliata rolled thin, brushed with oil, folded & rolled into layers, then cooked until golden and lightly crisp.

Soft in the middle, a little flaky on the edges.
Best eaten warm, straight off the pan.

Just flour, water, olive oil… and a bit of time.

Same flavour. Different shape. 🌻

Our Girasole di Zucca a little bit of sun sitting in the bowl.

Wood roasted pumpkin folded into hand-shaped bicolour pasta, dressed with burnt butter, sage and a touch of aged balsamic. Finished with amaretti for that crunch.

Same soul as before just wearing a new jacket.

Some dishes don’t need much convincing.

Coal roasted butterflied market fish, lemon butter, vongole & native herbs.

The fish hits the coals until the edges blister and char
Skin first , then it’s finished in a pan with lemon butter and sweet little clams that open up and turn the whole thing into sauce.

It’s coastal, a little messy, very buttery and exactly the kind of plate you want a piece of bread for.

No fuss. Just good fish and a hot kitchen🥵

One of our opening dishes… and for the past two years you haven’t stopped asking for it.

Pappardelle alla Cinghiale slow braised wild boar from the Northern Territory, tomato, pepper, juniper and a few other secrets. Rich, rustic and very Tuscan.

If you don’t… now’s your chance.

because we believe the best things come in little bites.

Yellowfin tuna, ocean trout & royal red prawn, folded with citrus, finished with our silky tonnato and fresh chives. Served in the shell

Hand shaped. Every. Single. Day. 🌻

At Ramona, pasta isn’t just made it’s crafted, folded and formed by hand in different shapes daily, because tradition deserves the time.

Meet Girasole di Zucca our new “sunflower” shape.
Filled with wood-roasted pumpkin, mostarda and amaretti for that perfect balance of sweet, savoury and a little nostalgic warmth.

Delicate petals. Golden centre. Big flavour.

✨ Happy New Year from all of us at Ramona ✨

As we step into a new year, we just want to pause and say thank you.

To our team past and present, new faces and familiar ones
this place quite literally wouldn’t exist without you.
The long days, the late nights, the care, the graft, the pride you take in what you do… it shows on every plate
We’re endlessly grateful.

To our guests - our locals who treat us like home, and those who travel just to sit at our tables ,thank you for choosing us again and again. In an industry that’s changed so much since I first started cooking back in 2006, your support is what keeps us going.

Hospitality isn’t what it once was. It’s tougher, more inconsistent, and often unforgiving. But moments shared over a bowl of hand-shaped pasta, a glass of wine, and a room full of energy make it all worth it. You remind us why we do this.

Here’s to another year of hand-rolled pasta, local and micro-seasonal produce, and a casual space built on care, connection, and hard work.

From our hearts to yours ,thank you for being part of the Ramona story.
Bring on the new year. 🥂🤍
