Back-to-back coffee releases!?
Another new offering has just landed on the Blue Sky webstore. This Double Washed Typica from Leo Dan in Ecuador is a juicy, vibrant little number, bringing the classic brightness and clarity we love in a washed coffee, with a heap of lush tropical fruit.
As always, our subscribers got first call and have been sipping on this one for a little while now. We’re stoked to finally get it out to everyone else. But if you want first dibs on the new drops - you know where to go!

New Blue Sky release!
We know we’ve kept you waiting for a new drop, but this one’s a cracker.
Last month our subscribers got first access to the Finca Noruega Natural, a big fruity anaerobic Maragogype from El Salvador. Now we’ve paired it with its partner in crime: an anaerobic honey from the same farm.
Same farm. Same varietal. Two different processing methods.
The Natural is jammy and full-bodied, with blueberry, blackberry jam, mandarin and grape-like acidity. The Honey is silky and sweet, with red grape, plum and redcurrant.
High quality, great value, and a genuinely fun tasting experience. If you’ve ever wanted to taste the difference processing makes, this is a pretty unreal chance to do it.

Got another Niccy just around the corner so wanna plug this abit more while it’s here!!
For this anaerobic washed lot, ripe cherries were floated immediately after harvest, depulped, and fermented in airtight tanks for 48 hours. Throughout fermentation, pH, mass temperature and brix levels were carefully monitored to ensure a clean, controlled process. The coffee was then washed with fresh water, patio dried for 12 days, rested for 10 weeks prior to hulling, and finally stored in Ecotact to preserve its character.
In the cup, this is a sweet and composed coffee with a syrupy mouthfeel and balanced structure. It leans into the comforting, rounded profile Central America does so well, while still offering clarity. ☕️

Still going strong. Colombian ‘booze bomb’ Giesha. Anaerobic Natural. Been frozen in the fridge- about a kilo left. Would love to send what’s left of this tropical punch 🤜bomb out with a bang. Don’t wait on this the faster it’s gobbled up the faster we get more stuff.

New coffee just dropped ☕️
We’re back with one of our favorite farms, Villa Betulia. This time we have an incredible natural Caturron from Luis Anabel. Sweet and jammy, with loads of cherry, red currant and cacao nibs in the cup. This is a big boozy coffee with lots of body and tame funkiness.
We’ve been loving it on filter and having a lot of fun pulling spros that remind us of a certain cherry flavored chocolate bar...

We often get asked what we think the best coffee brewer is. While there are plenty of phenomenal brewers out there and “best” always comes down to personal taste, we have long been advocates of flat bottom brewers.
Long-time Blue Sky followers will know we were early adopters of the Tricolate, which was (and still is) a pretty revolutionary piece of kit. More recently, we’ve had the Ceado Hoop on bar for almost a year now. We made the switch because it sits right at the intersection of excellent extraction and ease of use. Single-pour recipes mean faster service for our baristas and keep those multi-coffee filter menus flowing smoothly.
In this shot we are brewing a QC roast of a brand new coffee that will be landing with our Single Origin subscribers in February. This one is silky smooth with juicy raspberry and dark chocolate, and it will be available to subscribers before it hits the shelves. The subscription is where we share coffees like this first, including small lots and unreleased coffees we are excited about.

Chillter season is well and truly here at Blue Sky.
While cold brew is a classic, we’re big fans of chilling down a freshly brewed hot filter. Brewing hot preserves volatile aromatics that are lost with long cold brew process. By brewing hot and chilling immediately we get a more expressive chilled-filter like experience which we find quite distinct from cold brew. It also lets us serve on demand, meaning we can vary the coffees rather then one big batch.
Our go-to Chillter method:
• Brew stronger than usual
• Slightly coarser grind
• Bigger dose
• Start at 1:12, then dilute with ice back to 1:16
Serve over ice for a punchy, vibrant iced filter.
We’ve been especially into the big, boozy La Divisa Colombia Geisha as a summer chillter, and if you’re keen to try it yourself we’ve got some killer coffee bundles on sale now.
