Chelbessa is back šŸ‡

One of our favourites from last year’s Ethiopia drop has returned to the Blue Sky rotation, and this year’s crop is tasting just as good.

This natural Yirgacheffe is packed with blackberry and black grape, backed up by a bright nectarine-like acidity and a gentle winey character. It is juicy, sweet and fruit-forward, with plenty of natural-process sweetness while still staying clean and balanced.

A classic natural Ethiopia and a great example of why we keep coming back to Chelbessa.

New release: Masina CM Washed from Guji, Ethiopia.

Another heavy hitter eth coming in hot. This is a classic CM Washed: floral and sparkling. We are tasting tropical fruits, mandarin and apricot.

This coffee comes from the Masina washing station which was the site of project origins first Ethiopian CM lots. This station continues to produce excellent coffee, and we are stoked to be getting some heavy hitters back in the eth rotation.

New single origin release! Sabio Parainema.

This anaerobic washed Parainema comes from Sabio, the Ferrufino family’s vertically integrated operation in Nicaragua. By growing, processing and exporting directly from their own farms, Sabio is able to keep a close eye on quality from start to finish, producing coffees that are clean, consistent and great value.

This lot is sweet, soft and stonefruity, with notes of nectarine and apricot. It has a gentle acidity, a smooth structure and a really easygoing profile that should suit a wide range of brew methods. We have been enjoying this one pulled long as an espresso or as a filter.

Finca Noruega, now available as singles.

These two cracking El Sals first landed as a box set, giving you a side-by-side look at the same farm, same varietal, and two different processing methods.

After holding stock back for subscribers, we’re stoked to finally release these individually.

Both coffees are big, juicy Maragogype lots from Finca Noruega in El Salvador. The Natural is the jammier of the two with blueberry and blackberry notes. The honey is vibrant and silky with redcurrant and plum.

Back-to-back coffee releases!?

Another new offering has just landed on the Blue Sky webstore. This Double Washed Typica from Leo Dan in Ecuador is a juicy, vibrant little number, bringing the classic brightness and clarity we love in a washed coffee, with a heap of lush tropical fruit.

New Blue Sky release!

We know we’ve kept you waiting for a new drop, but this one’s a cracker.

Last month our subscribers got first access to the Finca Noruega Natural, a big fruity anaerobic Maragogype from El Salvador. Now we’ve paired it with its partner in crime: an anaerobic honey from the same farm.

Same farm. Same varietal. Two different processing methods.

The Natural is jammy and full-bodied, with blueberry, blackberry jam, mandarin and grape-like acidity. The Honey is silky and sweet, with red grape, plum and redcurrant.

High quality, great value, and a genuinely fun tasting experience. If you’ve ever wanted to taste the difference processing makes, this is a pretty unreal chance to do it.

Got another Niccy just around the corner so wanna plug this abit more while it’s here!!
For this anaerobic washed lot, ripe cherries were floated immediately after harvest, depulped, and fermented in airtight tanks for 48 hours. Throughout fermentation, pH, mass temperature and brix levels were carefully monitored to ensure a clean, controlled process. The coffee was then washed with fresh water, patio dried for 12 days, rested for 10 weeks prior to hulling, and finally stored in Ecotact to preserve its character.

In the cup, this is a sweet and composed coffee with a syrupy mouthfeel and balanced structure. It leans into the comforting, rounded profile Central America does so well, while still offering clarity. ā˜•ļø

Still going strong. Colombian ā€˜booze bomb’ Giesha. Anaerobic Natural. Been frozen in the fridge- about a kilo left. Would love to send what’s left of this tropical punch 🤜bomb out with a bang. Don’t wait on this the faster it’s gobbled up the faster we get more stuff.
