✨ Another big cooking day at Happy Home Chef! ✨

Today I prepared 50 fresh meals and 50 homemade snacks for a brand new client. 🥰 There’s nothing better than filling someone’s fridge and freezer with delicious, home-cooked food that makes busy weeks so much easier.

🍽️ This week’s menu:
• 🥗 Salmon Nourish Box
• 🥩 Slow Roast Lamb all n trimmings
• 🥓 Chicken stuffed with sun-dried tomato & feta, wrapped in bacon, served with roasted sweet & white potatoes and tomato basil sauce
• 🍛 Mild Thai Red Chicken Curry n rice

🍕 Snack choice:
• Mini English Muffin Pizzas

Every meal is cooked fresh in my client’s own kitchen, personalised to their tastes, and ready to enjoy whenever they need it.

Yesterday reminded me why I do what I do. ❤️

A few weeks ago, I donated a Happy Home Chef Meal Prep Experience voucher to my local school fundraiser. Today, I had the privilege of welcoming the wonderful winner into my kitchen and gifting her some meals.

What started as a day of chopping, stirring and cooking quickly became so much more.

As we spent the day together, she shared her story. Last year, she lost her beautiful three-year-old daughter “Orla” to cancer. 💔 Her daughter had a fall and she took her to hospital.. doing tests they coincidentally found tumors all over her body including her brain.. after that fall the tumor doubled in size over 5 days 😭

Can you even begin to imagine? She fought hard with chemo and had many surgeries.😭
Una is a palliative care nurse and cared for her daughter at home with Dad and family, till she took her last breath- whilst having a new born baby and another 4 year old daughter 😭. We cried together whilst she told me this story.. I just can’t even imagine how I would be still standing.

Suddenly, this wasn’t just about filling containers with meals. It was about filling a home with comfort, nourishment, and making life just a little easier for a family carrying the unimaginable.

We laughed. We cried. We cooked. We hugged. I may have shook us a couple of strong margaritas 😉

Some days, food is so much more than food. It’s love. It’s care. It’s one less thing to think about when life feels impossibly heavy.

Today, I was reminded that kindness has a ripple effect. A donated voucher at a school fundraiser became a day I’ll never forget, and I hope it brought a little light during such a difficult chapter in life.

Dear Una, thank you for trusting me with your story. It was an absolute privilege to cook alongside you and nourish your little family. ❤️
