In my former life working in the corporate world, all I wanted to do was to paint, draw, make and create beautiful artwork.

Now, I find the best days when I can find the balance of making and creating my works of art for the corporate world. Win-win!!!

Corporate catering theme: Poke bowls with black rice, brown rice base, 24 hour Brisket in Bulgogi glaze, Chicken, (for vegan) and a range of fresh salads and condiments for everyone to individualise their meal.

Bun Rieu - Pork, tomatoe and crab roe noodle soup! I am struggling to describe the flavours, I would say it’s very funky and pundent with sweet and sour notes from tomatoes and tamarind and certainly funky from the shrimp paste. Then you have the sweetness and richness of the pork stock which is the true hero of the dish. The shrimp oil lingers in the background and carries the subtle hits of garlic, tomatoes, and roasted shallots. Mix of mint, fish mint and lemon balm brings freshness and vibrancy.

It’s just yum!

End note: I wish I had my camera to share a photo of my children’s faces as I opened a fresh jar of shrimp paste. Ah! The shrieks of protests 🙄 😬🤣. However, I am pleased to report the soup made special mention in all their gratitude journals tonight.

I am grateful for small moments of joy and laughter x
