A message from Gavin (Jules' husband):

I'm deeply saddened to announce that Jules passed away this week after a long health journey.

For Jules, creating in the kitchen was one of her most dearly loved things, seconded by sharing her creations with family & friends.

One of her last messages to me was an update on her research and efforts to get a 'Thank-you' cupcake to all those in her life who shared her passions and supported her through her health journey.

Today, I whipped up a giant choc chip Smartie cookie!!! It was crunchy on the bottom, gooey on top and chocolatey and fudgey all over!!! πŸ˜‹πŸ˜‹πŸ˜‹

We mixed the caramelised butter and sugar, stirred in the flour and egg, dropped over the chocolate melts and Smarties and let it sit in the frying pan for 20 minutes while we did other things as it cooked!!

We carefully cut it into slithers for sensible small hands portions at afternoon snack time πŸ’œπŸͺ

THIS is a πŸ₯žπŸ₯žπŸ₯ž PANCAKE TRAY BAKE!! πŸ₯žπŸ₯žπŸ₯ž Mix up the pancake batter, drop in some warm goey jam and peanut butter, then marble it through, before popping it into the oven for twenty minutes. SLICE it up like pancakes and EAT IT!! With a bit of freshly whipped cream on the side πŸ˜‹ Pancakes in a flash while you're spending quality time getting dressed and being with the kids instead πŸ’œ

I've discovered Nadiya Hussain, on Netflix. She's got at least 2 shows, where she melds unusual things together but comes up with delicious things that still make sense!! πŸ₯₯πŸ‡

πŸ₯« She also isn't shy showing us how to use a good tin of whatever is in the back of the pantry, or doubling up or doing things a little more on the cheap, in order to support a large hungry family. She's refreshing and fun in her presentation.

Next time, I'd try a chocolatey biscuit base and perhaps mix up my jam flavours πŸ’, or even drop in peanut butter cups πŸ₯œ instead of choc drops 🍫 The possibilities are ENDLESSSSSSS!!!!

My beautiful mum took on the ANZAC BISCUITS duties, in my absence, today. She uses the Classic Women's Weekly Cookbook recipe for perfect biscuits. Maybe I'll get home to make some this afternoon.

Tonight we begin the Adelaide Bakes Big Bakers Bootcamp, which is always a lot of fun and can be done in hourly catch ups through the days until next Sunday. Maggie is an absolute champ, she takes takes the time to teach all the why's and science around what's making your baking tick 🀩🀩🀩

Mmm Nigella's Rosebud Madeleines! 😍 These were even quicker and easier to whip up than yesterday's jam doughnut muffins πŸ˜‹ I used the larger mold, instead of the teeny teaspoon-sized one, which meant I undershot the sizing but overshot the cooking time. I don't think anyone's taste buds noticed though. They were gone in a flash.

Jam Muffin Doughnuts! These Nigella doughnuts are really very quick to make and are perfect for small hands as school pick up snacks!! And they are extra special when you make then in love heart shapes 😁

I filled mine with raspberry jam and covered lightly with cinnamon sugar and melted butter as soon as they came out of the oven ❀️❀️❀️ They don't look like much until you bite into that sweet gooey centre!

I've found my favourite banana bread recipe so far! It's another Donna Hay, because her website is pretty and it just leads you down the rabbit hole of easy and delicious looking tasty treats.

It's super simple, with no rum-soaked sultanas, or 'not-safe-for-school' nuts, or any other faff. The crumb was light and nice, with a just thick enough crust. It also lacked that cloying sweetness that other banana breads have when there's too much brown sugar or syrup, etc.

I highly recommend this one!!! There's only half left, from a fresh bake this afternoon, but it'll fill some school lunch boxes for a few days at least 😁

Today I made vanilla ice cream and 🍫 chocolate ice cream for the team. It was the easiest recipe and it makes the most creamy and delicious custard. Despite trying to make a reduced quantity, I still ended up making and serving up WAAAAY too much sugar for my small people. We knew we were in for a lot of activity and noise post-consumption!!

Aside from their clear enjoyment of the finished product, one of the best parts was when I had just opened the waffle cone packet and youngest was so impressed he asked if I'd made them, with such amazement in his voice. 🍦He was so impressed. I DID dip the ends in chocolate and sprinkles, and make my own freckles, though 😁 I love a simple touch that looks impressiver than it is.

We expect to be up until midnight helping the kids to settle down for sleep 😴 so in our house ice cream is a sometimes-food and we made a conscious choice. Hopefully the dog can keep chasing them around the garden for a while longer before she needs a nap.

I use an Aldi ice cream machine - it's pretty small capacity. Do you have a favourite ice cream recipe/machine? 🍦🍦🍦

A friend recently made a focaccia that looked like this 'overnight' version that I've tried once before. I've been thinking about trying it again and I needed to make one to take to a family lunch today. I had limited time this morning, so it seemed like a good idea to make it last night, ahead of time (to ferment slowly in the fridge) and therefore leaving me more room to make more HCBs first thing today.

The dough was pretty much the same ratios of ingredients as my normal 'rise for a few hours' recipe, but somehow it just didn't 'dough up' and stayed really sloppy, gloopy and runny. When I checked it this morning it was still pretty runny, but it had all the bubbles. I tried to have faith, and I held tight to the trust that a friend, who uses this recipe a lot, had in the recipe. She tends to wing it a bit more than I do and isn't so precise with the measurements, and assured me that it would work or be a fun experiment!

Despite the recipe telling me to roll the dough into a ball, I managed to POUR the gloop into a dish. I carried it oh so carefully, on my lap, all the way to our lunch location, so mindful of it spilling out of the dish all over me, the car, everything. I watched as all the air slowly bubbled to the top and burst as we drove the hour to Mt Tamborine. Still, I held the faith!

I got it into the oven ASAP. I reduced the heat a little, thinking to balance it out with a little longer cooking time, to counter the extra liquid that I felt the dough had. Oh my goodness! After 5 minutes, it began to look like an actual bread!

I was STUNNED. I couldn't stop exclaiming how it ACTUALLY LOOKED LIKE BREAD! This weird, gloopy, sloppy mess turned into a spongy, crispy-on-the-outside, delicious focaccia!!! It still held enough air and bubbles to soak up the juices and sauces from our magnificent lunch and was just incredible - made moreso by the fear and excitement of the unusual fermentation/consistency.

So, sometimes recipes are weird. Sometimes they work. Sometimes they don't. But it's all fun and games and learning :D

Today was my first chance to get onto these tasty treats!! The most simple to make and DELICIOUS Classic Hot Cross Buns by Donna Hay. The spices and sultanas are just divine to smell baking and to tuck into, while the buns are still hot from the oven. I don't usually eat bakery foods but I almost helped myself to seconds this morning!! What an absolute pleasure to make, and to share with my family for Easter morning tea today.

I'm planning to make more tomorrow, HUZZAH!! I *might* even make some chocolate ones, later in the week, because I'm a sucker for chocolate!!
