In Italy, you don’t put cheese on seafood.
That rule exists for a reason.
But Italian cooking has never been about blindly following rules, it’s about understanding them, then cooking for the moment you’re in.
This spaghetti with mussels comes dressed in a slow-roasted capsicum sauce, finished with just enough pecorino to round the dish, not overpower it.
