A quick stop at my local , a visit to the deli, a couple of freshly baked rolls and 10 minutes later we’ve got these loaded Italian chopped sandwiches ready for race day.
The best part? There’s no right or wrong combination. Pick your favourite cold cuts, cheese and antipasto, chop everything together, drizzle over a little balsamic glaze and white wine vinegar, stuff it into a fresh bakery roll and you’re done.
Quick. Fresh. Packed with flavour. The ultimate last-minute meal to share with your mates.
Quick Recipe (Serves 2) 🥪
Ingredients
150g thinly sliced mortadella
150g sliced salami
100g sliced Provolone Dolce
Sun-dried tomatoes
Marinated artichokes
Pitted green olives
1 tbsp balsamic glaze
1 tbsp white wine vinegar
2 freshly baked IGA bread rolls
Method
- Roughly chop all the meats, cheese and antipasto ingredients.
- Drizzle with the balsamic glaze and white wine vinegar.
- Toss everything together until well combined.
- Fill the freshly baked rolls generously and enjoy!

What a wonderful morning! 💙
Today we had the pleasure of welcoming the Prep students from Ascot State School to visit our shop. It was fantastic to see so many smiling faces, curious minds, and excited little shoppers.
Being part of our local community is something we truly value, and it was a privilege to share a little of what we do with the next generation. Thank you to the amazing students and teachers for spending time with us—we hope you enjoyed your visit as much as we enjoyed having you!
