Before the doors open, the work has already begun.
Tables are set with intention. Pasta is made by hand. Ingredients are prepared carefully. Every final detail is checked by a team that understands that great hospitality begins long before the first guest arrives.
This is the quiet rhythm before service at Pilloni.
Care in every detail, every day.

Four years in a row.
We are incredibly proud to once again be recognised by Gourmet Traveller as one of Australia’s Top 100 restaurants.
When we arrived in Australia almost 14 years ago, we could never have imagined the journey ahead of us. This country welcomed us, gave us opportunities, supported our ideas and allowed us to build something that has become such an important part of our lives.
Hospitality is never the easiest road. There have been long days, difficult moments, plenty of risks and an extraordinary amount of hard work. But it has also been one of the most rewarding journeys we could have hoped for.
To our team, thank you. Pilloni simply would not exist without the people who stand beside us every day, believe in what we are creating and somehow continue to put up with us along the way.
To Gourmet Traveller, thank you for recognising what we do. It means enormously to us, particularly in a year where it is so encouraging to see so many independent restaurants represented among Australia’s Top 100. Recognition and support for independent hospitality matters more than ever.
And most importantly, thank you to every guest who has walked through our doors, returned, recommended us, celebrated with us and supported Pilloni.
So we raise a glass to another year of hospitality, good food, good wine, full tables and plenty of laughter.
Grazie.
Valentina and Andrea
