The swordfish starts its journey in Mooloolaba and heads to us. 🐟
Once received it is carefully aged for around a week. On the day it's served it goes into our speciality marinade then hit on the charcoal.
All this before making its way onto your plate at Tillerman. 🍽
It's a process that develops flavour, improves texture and rewards patience.
