These awards mean so much because they reflect the years of hard work, the values we believe in, and the people who make it all possible.
For Toby and I, hospitality has always been about creating places where people feel welcome, connected and proud to be part of. Having grown up in a family with a long history in the industry, I’ve always understood that great hospitality is ultimately about people - and that belief remains at the heart of everything we do.
Most importantly, these awards belong to our incredible team of 140 people. Your passion, hard work, commitment and genuine care for our guests are what make the Full Moon what it is today.

Meet Ivan, our restaurant manager and undoubtedly the fastest runner on the team 🍽️🏃🏻♂️
Ivan has come full circle… from a two-week high school work experience kid to leading the team with quiet confidence (and a seriously impressive stride).
Ivan first joined us back in November 2015, took a short detour in 2021, and returned in 2024 to pick up the reins once again as Restaurant Manager — clocking up around 7.5 years with the ‘Moon.
A former St Pat’s boy, proudly vegan, and a marathon runner who doesn’t seem to understand the concept of “rest day”🏃🏻♂️
If he’s not running the restaurant, he’s likely pounding pavement at a local parkrun or ticking off another big race — most recently the Toowoomba Marathon.
Next time you’re in, say hi to Ivan… just don’t challenge him to a race unless you’re prepared to lose 😉

Money may not buy you happiness but it can buy you our May dish of the month...
Pasture-fed lamb, sourced from the goldfields of Victoria, seasoned with thyme and rosemary and roasted to a perfect blush pink. Served with a honey carrot purée, golden roasted Kipfler potatoes and garnished with a variation of a classical petits pois à la Française; a vibrant medley of peas, baby onions and lightly charred cos hearts. Finished with a rich red wine jus and a scattering of crumbled feta.
🍷 Pair this dish with a glass (or bottle) of Mesta Organic Tempranillo for the full experience.

A huge congratulations to our Bayside drawing competition winner, Tilly! Her beautiful artwork captured a simple but special Bayside moment, walking her dog Dotty and soaking up the view from the Full Moon Hotel deck 🐾🌞
It’s these little moments, with salty air, wagging tails, and that endless blue horizon, that make our little corner of the world so special. We absolutely loved seeing it through Tilly’s eyes.

If taking public transport, you can take any bus or train that goes to the Fortitude Valley Station and then walk towards Ann Street. From there, you can find the venue located on Eagle Terrace.
