From the very beginning, Onyx has been guided by a simple but powerful mantra: Never settle for good enough. What started as a phrase has grown into a philosophy that shapes every part of their work from sourcing to roasting, training to service.

Their journey begins at origin, travelling across countries and terrains in search of exceptional coffees. Each lot is selected with intention, held to rigorous sensory standards, and treated with precision once it arrives at their roastery. Through careful roasting and constant cupping, they refine every profile until the coffee expresses its full potential in the cup.

But Onyx doesn’t stop at the coffee itself. Education sits at the core of what they do. Through structured training, hands on practice, and a deep commitment to sharing knowledge, they empower both professionals and everyday coffee drinkers to understand coffee from farm to cup. This same level of care extends into their cafes, where hospitality completes the experience, a space where you feel seen, welcomed, and connected.

Transparency is another pillar of their craft. Every coffee is backed by detailed data, from pricing and sourcing to cup scores, offering a rare level of openness that honours both the producer and the process. Paired with their use of solar energy in roasting, Onyx continues to push forward with intention and responsibility.

Welcome .cafe to our Guest Bar

We’re excited to welcome Tribute Torréfaction from the beautiful French region of La Drôme to our Guest Bar a roastery founded in 2025 with a clear vision: to reveal coffee’s aromatic identity through terroir, craftsmanship, and respect for the people behind each bean.

Tribute is co-founded by Paul Arnephy, Meilleur Ouvrier de France Torréfacteur (M*F), whose coffee journey began nearly 20 years ago in Melbourne before continuing in France over the past 16 years. With experience spanning sourcing, roasting operations, and quality control, Paul’s background includes accolades such as M*F Torréfacteur (2018), Champion de France de Torréfaction SCA (2022), and graduation from ZHAW Coffee Excellence.

Alongside him is Gonzague Jaret, a former banker who chose to leave finance behind to fully pursue his passion for coffee and craftsmanship, bringing with him deep experience in roasting, logistics, quality control, and customer service.

At the heart of Tribute Torréfaction is an uncompromising focus on green coffee quality.
Every lot is rigorously evaluated against strict criteria, with a strong commitment to price traceability and understanding the value retained in producing countries. Tribute actively seeks specific cultivars, producers, regions, and processing methods, believing that quality is not only about flavour, but about durability, fairness, and long-term value.

Roasting is where this intention is transformed. Each coffee is developed with a carefully crafted roast profile designed to express the character of the green bean.

Before any coffee leaves the roastery, it undergoes detailed quality control, from roast colour and weight loss to density measurements, followed by final sensory evaluation at the cupping table.

This year, we’re honoured to be placed 29th on the list.

It’s a proud moment but also a moment of reflection. A reminder of what we’ve been working on, what we already have, and where we can continue to improve in order to create an even better coffee experience.

This achievement didn’t happen overnight. It’s built day by day, cup by cup.
To everyone who walks through our doors, supports us, shares conversations, and builds connections with us over coffee - thank you❤️. Your presence means everything.

To the team behind Coffee Anthology:
from the baristas on bar crafting coffee every day, to our head of coffee ensuring the quality we serve, to the managers holding the team together, to our floor, pastry, kitchen department and every team member facing customers with care and dedication, this belongs to all of you.

We’re thrilled to have Moonshine Coffee Roasters returning to our Guest Bar once again!

Born from a love for late-night creativity and the quiet hum of coffee roasting, Moonshine’s story is inspired by the spirit of those who, even during Prohibition, refused to let passion sleep — brewing their craft under the moonlight.

That same spirit runs through everything Moonshine does. While most of the city winds down, their roastery lights up — roasting small-batch specialty coffee through the night, ensuring every bean shines with clarity and character by sunrise. By day, they share those roasts with a community that loves coffee as much as they do. Their motto captures it perfectly:
“No worries, be coffee.”
